Abstract: Negundo Chastetree Fruit ethanol extract can be a natural food antioxidants.Therefore the study of its resistance to antioxidant activites is valuable.The conditions of extracting 100g flavone sample from Negundo Chastetree Fruit by ethanol are 250 ml ethanol,60℃～65℃,and 60h.The extract of 100g Negundo Chastetree Fruit for 3 times are 2.44g,1.23g,and 0.84g and the contents of flavoneare 11.52%,(11.51%,)and 9.50% respectively.0.030% extract could decrease POV in oil to 8.05% within 9 days,while 0.120% extract makes different result.The POV in oil changes little,as 0.020%Gallic acid third fat is added.The experiment indicates that antioxidant activites of the extract from Negundo Chastetree Fruit is relevant to the content of flavone,so it can be concluded that flavone is the most important antioxiactive component of the extraction from Negundo Chastetree Fruit.
