A Study of the Preparation and Properties of Edible Films of Chitosan

Abstract: Compound films of chitosan/gelatin / Glucono-Delta-Lactone with glycerol as plasticizer were prepared to assay the elongation properties,water vapor permeability and gas barrier properties of these films.The results show that Glucono-Delta-Lactone,gelatin cooperating with glycerol can improve the elongation properties of films;the water vapor permeability of films increases as with the increase of the gelatin and glycerol;Compound films made from 1% chitosan solution,0.2% gelatin,0.8% Glucono-De...
