The Application of Monoglycerid Ester in Non-dairy Creamer

Abstract: It researches the application of Monoglycerid Ester in nondairy creamer. Different emulsifier components of glycerol monostearate , mono- and di-glycerid ester and unsaturated monoglycerid ester were obtained. Experimental results show that the odors are different when different components are added to the coffee.
